How to make Jamaica Water (agua de jamaica)

Jamaica Water (or agua de jamaica) can be drunk in many ways. Here are some of our favourite recipes:

hot hibiscus tea image

As a hot tea

Add a teaspoon of the Jamaica Water blend per person to a tea infuser or tea pot and allow to brew for 3-5 minutes depending on how strong you like it! The tea will turn a delicious deep red

Add sugar, honey or a twist of lime to taste or nothing at all! (that’s how we like our agua de jamaica)

As a super-refreshing agua fresca (enough for 4)

This is how Hibiscus tea is drunk across Latin America as an agua fresca. It’s amazingly refreshing and is perfect for hot weather, cold weather or as a great replacement to juice or fizzy drinks. Agua de Jamaica is at once sharp and refreshing with a deep, dark, berry magenta colour. The taste is similar to cranberry juice with floral overtones and a slight tartness. Try it with a twist of lime and a handful of your favourite chopped fruit.

  • 4 pints of water
  • 150 grams of sugar
  • 3 tablespoons of Jamaica Water tea (use more if you like it strong or less if not so much)
  • A small piece of ginger (around 3cm) peeled and sliced thinly (optional)
  • A half stick of cinnamon (optional)
  • A twist of lime (optional)
  • Orange slices or any of your favourite chopped fruit – berries work perfectly (optional)
  • A sprig of fresh thyme (optional)
  1. Add two pints of water and the sugar to a large saucepan with the chopped ginger and the cinnamon stick
  2. Heat the mixture until it is boiling and all of the sugar has dissolved
  3. Remove from the heat and stir in the hibiscus flowers
  4. Cover the saucepan and let it sit for 20 minutes
  5. Add the remaining 2 pints of water or add ice to the concentrated mixture to cool quickly
  6. Add a twist of lime and serve with the fresh chopped fruit
